Lasagna Primavera

Ingredients:
9 lasagna noodles
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
2 cups assorted vegetables (such as zucchini, bell peppers, mushrooms, spinach)
2 cloves garlic, minced
1 tbsp olive oil
2 cups marinara sauce

Directions:
Preheat the oven to 375°F.
Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
Add olive oil into the skillet and heat it. Add minced garlic and sauté for 1-2 minutes.
Add assorted vegetables to the skillet and sauté for 5-7 minutes. Season with salt and pepper.
Add ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese in another saucepan. Mix well.
Spread a thin layer of marinara sauce into the baking dish. Place three lasagna noodles on top.
Spread half of the ricotta cheese mixture over the noodles, followed by half of the sautéed vegetables.
Repeat the layers with marinara sauce, lasagna noodles, ricotta cheese mixture, and sautéed vegetables.
Top with the remaining marinara sauce and sprinkle the remaining mozzarella and Parmesan cheese on top.
Cover the baking dish with foil and bake for 25-30 minutes. Then remove the foil and bake for an additional 10-15 minutes.
