Lasagna Primavera

This fresh twist on traditional lasagna is loaded with tender spring veggies and layers of melty cheese. It’s cozy comfort food with a garden-fresh vibe.

Lasagna Primavera

Ingredients:

  • 9 lasagna noodles

  • 2 cups ricotta cheese

  • 2 cups shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 2 cups assorted vegetables (such as zucchini, bell peppers, mushrooms, spinach)

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 2 cups marinara sauce

  • Salt and pepper to taste

Directions:

  • Preheat the oven to 375°F.

  • Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

  • Add olive oil into the skillet and heat it. Add minced garlic and sauté for 1-2 minutes.

  • Add assorted vegetables to the skillet and sauté for 5-7 minutes. Season with salt and pepper.

  • Add ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese in another saucepan. Mix well.

  • Spread a thin layer of marinara sauce into the baking dish. Place three lasagna noodles on top.

  • Spread half of the ricotta cheese mixture over the noodles, followed by half of the sautéed vegetables.

  • Repeat the layers with marinara sauce, lasagna noodles, ricotta cheese mixture, and sautéed vegetables.

  • Top with the remaining marinara sauce and sprinkle the remaining mozzarella and Parmesan cheese on top.

  • Cover the baking dish with foil and bake for 25-30 minutes. Then remove the foil and bake for an additional 10-15 minutes.

  • Serve!
