How to make Wide Noodles with a Pasta maker

Rolling out wide noodles at home is easier than you think—and way more satisfying than store-bought! With a pasta maker and a little practice, you’ll have tender, chewy ribbons of fresh pasta ready to soak up your favorite sauces in no time.

How to Make Wide Noodles with a Pasta Maker

Ingredients:

  • 2 cups all-purpose flour

  • 2 eggs

  • 1/2 teaspoon salt

  • Water, as needed

Instructions:

Prepare the Pasta Dough:

  • On a clean work surface, make a mound with the all-purpose flour.

  • Create a well in the center of the flour mound large enough to hold the eggs.

  • Crack the eggs into the well and add the salt.

  • Using a fork, gently beat the eggs while gradually incorporating the flour from the edges of the well.

  • Continue mixing until a shaggy dough forms.

  • If the dough seems too dry, add water, a tablespoon at a time, until the dough comes together.

Knead the Dough:

  • Once the dough comes together, knead it for about 5-7 minutes until it becomes smooth and elastic.

  • If the dough feels sticky, dust your hands and work surface with a little flour as needed.

  • Shape the dough into a ball, cover it with a clean kitchen towel, and let it rest for about 30 minutes at room temperature. This allows the gluten to relax, making the dough easier to roll out.

Roll Out the Dough:

  • After resting, cut the dough into smaller portions for easier handling.

  • Take one portion and flatten it into a rough rectangle shape with your hands.

  • Set your pasta maker to the widest setting and pass the dough through the rollers.

  • Fold the dough into thirds (like folding a letter) and pass it through the rollers again.

  • Repeat this process 3-4 times until the dough becomes smooth and pliable.

Thinning the Dough:

  • Adjust the pasta maker to a narrower setting and pass the dough through once.

  • Continue to pass the dough through the rollers, adjusting to narrower settings each time, until you achieve the desired thickness for your wide noodles.

  • Dust the dough lightly with flour as needed to prevent sticking.

Cut the Noodles:

  • Once the dough reaches the desired thickness, switch to the cutting attachment for wide noodles.

  • Pass the rolled-out dough through the cutting attachment to create wide noodles.

  • As the noodles come out, gently toss them with a little flour to prevent them from sticking together.
