Ingredients:
3-inch Fresh ginger, unpeeled
1 cup Lemon juice, freshly squeezed
1/3 cup powdered monk fruit sweetener or sugar/sugar substitute of your choice
4 cups of water

Instructions:
Cut the unpeeled ginger into rounds.
Add sweetener, water, and ginger into the saucepan and place it over medium flame.
Simmer it. Turn the heat to low and let infuse for 10 to 15 minutes.
Remove from the flame. Leave to infuse for a further 15 to 30 minutes.
Remove the ginger. Add lemon juice and stir well.
Place it into the fridge for 1 hour.
Serve!
