How to make Spaghetti with a Pasta maker
Making spaghetti from scratch is pure pasta joy! With a pasta maker and a simple dough, you can create springy, fresh strands that cook up beautifully and taste miles better than anything from a box.
Ingredients:
2 cups all-purpose flour
2 eggs
1/2 teaspoon salt
Semolina flour or additional all-purpose flour for dusting
Instructions:
Prepare the Dough:
On a clean work surface, mound the flour and create a well in the center. Crack the eggs into the well and add the salt.
Using a fork, gradually incorporate the flour into the eggs until a dough forms.
Once the dough starts to come together, knead it with your hands until it becomes smooth and elastic, about 8-10 minutes.
Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.
Divide and Roll the Dough:
After resting, unwrap the dough and cut it into smaller pieces for easier handling.
Dust the work surface and dough pieces lightly with semolina flour or additional all-purpose flour.
Flatten one dough piece into a rectangular shape with your hands, then pass it through the pasta maker's widest setting.
Fold the dough into thirds and pass it through the widest setting again.
Repeat this process several times, gradually reducing the thickness setting on the pasta maker with each pass until you reach your desired thickness for spaghetti.
Cut the Spaghetti:
Once the dough reaches the desired thickness, switch the attachment on your pasta maker to the spaghetti cutter.
Pass the rolled dough through the spaghetti cutter, catching the strands as they come out.
Dust the freshly cut spaghetti with semolina flour to prevent sticking, and gently separate any strands that may have stuck together.
Cook the Spaghetti:
Bring a large pot of salted water to a boil.
Add the freshly made spaghetti to the boiling water and cook for 2-3 minutes, or until al dente.
Use a slotted spoon or pasta fork to transfer the cooked spaghetti to a colander to drain.
Serve the spaghetti immediately with your favorite sauce and toppings.
